Ingredients
The Juice of 10 Freshly Squeezed Organic Oranges
1 tbsp of Fresh Organic Lemon or Lime Juice
3 liters of Fresh Pure Water
1/2 a cup of Organic Raw Sugar
1 tsp of Organic Dark Molasses or Dark Raw Honey
1 cup of Mesophilic Culture or Whey from Yoghurt or Cheese
Method
Place 1 cup of the water and sugar in a saucepan and heat it
to dissolve the sugar and then add the orange, lemon, molasses and rest of the
water and stir it to mix and then allow it to cool to room temperature. Add the
mesophilic culture stirring to mix well then place the liquid in a 4 to 5 liter
food safe container and allow it to sit covered with a piece of cheesecloth
secured with twine undisturbed for 2 to 3 days. The longer it sits the more
sugar will be used by the fermentation and the more tart the final orangeade
will be. Taste it and when you are happy with the flavor and fizziness place it
in 1 liter strong sterile airtight, foodsafe containers that can handle the
pressure, and keep it refrigerated until use.
