Drinking fresh vegetable juice made with selected vegetables is a great way to get a wide range of nutrients every morning, it is one of the most effective ways of ensuring our body gets many of the essential vitamins, minerals and micro-nutrients needed for optimum health, without the bulk you would get if eating whole raw vegetables. We tend not to juice fruits because many fruits contain large amounts of sugars, so are best eaten whole so you get the advantage of all their nutrients and micro-nutrients, this assists the body to metabolize the high sugar content of most fruits, reducing the probable rise in high blood sugar levels you would get if drinking just the juice. Most vegetables have a fairly low level of nutrients in their dietary fiber and fewer sugars than most fruits. Some exceptions like carrots, which have a very high sugar content, we use sparingly, but they are so high in essential nutrients that we include them in our daily juice because of the variety of compounds they offer.
There are several types of juicers available we prefer the auger type as it gives a dryer pulp and more juice than the high speed Rota types which can damage some of the nutrients.
Ingredients
2 Large Organic Carrots
2 Sticks of Organic Celery, leaves included
3 or 4 ripe Organic Tomatoes
1/2 a Large Organic Capsicum
1 whole Organic Cucumber
1 cup of peeled Organic Broccoli stalks, or Broccoli Sprouts
1 cup of Organic Cauliflower
1 cup of Organic Green Leafy Vegetables – Savoy Cabbage, Bok Choy, Fancy or Colored
Lettuce or a mix of all to make about 1 Cup
1/2 a cup of Organic Sunflower Sprouts
1/4 to 1/2 of a cup of Organic Aloe Vera, skinned
A small piece each of Organic Ginger & Turmeric, (about half the size of a little finger because of their strong tastes)
1 tbsp of Fresh Coconut Oil or Cold Pressed Organic Olive Oil
2 or 3 cloves of Organic Garlic or more if suffering any infection
Other Organic vegetables that can be used include Radish, Mushroom, Lemongrass, Asparagus, Onions, Leeks, Beets, Brussels Sprouts etc some of these tend to have a rather strong taste.
Method
Wash the vegetables and leave the skin on them if edible as the skin contains many valuable nutrients, then cut them into sizes that will fit into your juicer and process them. Any remaining juice will keep for about 12 hours in the refrigerator in a covered glass or food safe container or it can be frozen to make ice candies.
We use the remaining pulp for a variety of things like;
Adding to soups and stews as a thickener
Making Homemade Vinegars
Adding to our homemade animal feeds for our Dogs, Pigs & Chickens Drying then grinding it to make flour for baking
