Easy Pineapple Soda Recipe

Ingredients makes about 3 Liters

1/2 a cup of Whey (we get it from our cheese making see recipe for making any of our soft cheeses or the liquid from live yoghurt is also whey)
8 cups of Organic Pineapple skinned and cubed into 6cm (1/4in) cubes
3/4 of a cup of Organic Raw Sugar
1/2 a tsp of Sea Salt
1 cup of Pure Fresh Water (Non Fluoridated, Non Chlorinated)

Method
Dissolve the sugar in the cup of water it, can be heated until sugar dissolves then cooled to room temperature.
In a food safe container that holds at least 3 liters place all the ingredients and add enough fresh clean water to make a total of 3 liters, stir a little, then cover with a cheesecloth or other cloth, secured by a rubber band or twine and leave for 2 to 5 days.
You can start doing the taste test after 2 days. When you are happy with the taste place the soda in the refrigerator this will retard the fermentation process.
It is now ready to drink and enjoy. The longer the mixture ferments the more sugar is used up so the soda becomes more bitter or tart.
If bottling the soda the bottles should be sterilized first.
We find the easiest method is to wash the bottles, then rinse with a 1/2 tsp of baking soda (bicarbonate soda) in each bottle, shake it a bit to remove any soap residues etc, tip that out, then rinse in pure fresh water.
They then should be placed submerged with their caps off, in a pot of water and boiled for at least 10 minutes. We use the pineapple trimmings to make pineapple vinegar see chapter 12.
