Ingredients
1/2 a cup of Organic Fresh Lemon Juice or 2 large Organic
Lemons very finely sliced
14 cups of Fresh Pure Water
2 cups of Organic Raw Sugar
1/8 of a tsp of Organic Dried Yeast
20 Organic Raisins
Method
Place the water and sugar in a saucepan and heat it to
dissolve the sugar and add the lemon juice then allow it to cool to room
temperature add the yeast and stir it to mix, then transfer it into a foodsafe
container, we use a crockery jar. Cover it with cheesecloth tied with twine to
stop uninvited guests entering and leave it to sit for 8 to 12 hours. Very
small bubbles will have formed around the edges of the liquid, strain the
lemonade and place it in 1 liter strong sterile airtight, foodsafe containers
that can handle the pressure, add 1 tsp of sugar and 4 to 5 raisins in each
container and tighten the lids. Leave the lemonade until the raisins have risen
to the tops, opening each day to relieve the pressure so they will not burst,
they are now ready but the longer you leave the lemonade the fizzer it will
become. When you are happy with the lemonade place it in the refrigerator until
use. Loosen the tops now and then to relieve the pressure.
