Ingredients for 4
people
8 medium to thick slices of your favorite Homemade Bread
8 slices of cooked Home-cured or Organic Ham or Bacon
4 large ripe Organic Tomatoes sliced thinly
4 large Organic Field Mushrooms peeled and stalked
12 spears of steamed fresh Organic Asparagus, with the hard
ends cut off
4 slices of Fresh Organic Pineapple (optional)
2 medium Organic Capsicums thinly sliced
1/4 of a cup of chopped Organic Chives
4 large Free Range Naturally Fed Organic Eggs
1 cup of Organic Pure Whole Milk or Coconut Milk
1/4 of a tsp of Organic Ground Nutmeg
1 tsp of Sea Salt
1 tsp of Organic Cracked Black Pepper
4 slices of Homemade Mozzarella cheese
4 slices of any other Organic or Homemade Cheese you like
Organic Mixed Herbs of your choice
Method
Place 4 slices of the bread in an oiled baking dish leaving
a bit of space between each so they can be easily taken out for serving.
Place a layer of sliced ham on each slice of bread followed
by a slice of pineapple Then a layer of cheese, a layer of mushrooms, a layer
tomatoes & capsicum, sprinkle them with herbs and add a layer of asparagus
followed by last layer of cheese and place the other 4 slices of bread on top
of each.
Beat the eggs, milk, salt, pepper, nutmeg and chives until
well combined and pour this over the bread. Cover the toast and keep it chilled
for about 6 hours or overnight in refrigerator. Remove the French toast from
refrigerator 30 minutes before baking.
Bake it @ 180 degC (350 degF) for 30 minutes or until a
skewer inserted in the center comes out clean and then allow it to stand for 10
minutes before serving.
