Lightly Poached Eggs with Gluten Free French Bread Recipe



Ingredients for 4 people
8 large Free Range Naturally Fed Organic Eggs
1/4 of a tsp of Homemade Vinegar or Raw Sugar
Sea Salt & Cracked Black Pepper to taste
1 Organic Avocado

                                    Method
Half fill a 30cm pan with water & bring it to the boil, add the vinegar (or sugar this helps the whites to stay intact) (optional).
Reduce the heat to a low simmer & gently place the eggs in the water.
Sprinkle a little sea salt & pepper to taste on eggs.
Cook until whites are set but yolks are still runny 3 to 4 minutes.
Remove eggs with slotted spoon and drain excess water.
Place on the bread spread with avocados, or lightly toast the bread first if preferred.
Optional additions are mixed herbs and or Parmesan Cheese.
