Simple Oat Pancakes Recipe


Ingredients
1                   cup of Organic Pure Wholemeal Flour or Homemade Vegetable Flour
1/2 a cup of Organic Rolled Oats
1/4 of a tsp of Sea Salt
1 cup of Pure Organic Whole Milk or Organic Nut Milk
1 & 1/2 tbsp of Raw Honey orb2 tbsp of Raw Organic Sugar
1/4 of a cup of Homemade Yoghurt
2                   tsp of Homemade Baking Powder
1 tsp of Organic Ceylon Cinnamon
1 Large Free Range Naturally Fed Organic Egg
1 tsp of Pure Organic Vanilla Extract (not imitation)
1/2 a cup of optional extras like dried Fruit or Nuts Etc
Coconut Oil, Organic Animal Lard or pure Unsalted Organic Butter

Method
Whisk the milk, eggs, honey and yoghurt together in a bowl.
In another large mixing bowl mix the flour, oats, salt, baking powder, cinnamon and any extras until combined.
Then make a well in the center of the dry ingredients and pour the wet ingredients into the well, stirring gently until just combined. Over mixing will produce heavy and tough pancakes.
Place a table spoon of coconut oil in a heavy bottomed pan and heat it, then pour the excess oil into a small cup or bowl leaving just enough to stop pancakes from sticking, pour about 1/3 to 1/4 of a cup of the mixture into the pan and cook it until small bubbles form on surface, about 1 minute then flip it over and cook the other side for about 2 minutes, stack them on plate when cooked and maybe keep them warm in an oven until the rest are cooked.
Pour some more of the oil in to the pan, then when hot tip off excess (to be used on next pancake) and cook the same as first, continuing until all mix is used.
