Gluten Free Pancakes Recipe


Ingredients
3 medium sized Organic Bananas
2 tbsp of Raw Organic Cashew Nuts
2 tsp of Ground Organic Ginger
A dash of Sea Salt
Coconut Oil, Organic Animal Lard or pure Unsalted Organic Butter for cooking

Method
Blend all the ingredients in a blender or use an immersion blender, blending until the mixture is smooth. If mixture is too thick add a small amount of coconut milk or water, just a table spoon at a time, to obtain a mixture that just runs slightly, if too thin add a teaspoon of coconut flour.
(Coconut Flour soaks up lots of moisture).
Heat a small amount of coconut oil in a heavy bottomed frying pan or skillet on medium heat. To Test drop a drop of the mixture into the pan, the oil will sizzle when hot enough.
Pour the batter into pan using a soup ladle or cup, about a 3rd of a cup at a time.
Cook the pancake for several minutes or until bubbles form over the surface, then turn it over and cook the other side for about a minute.
Serve them plain or with your favorite toppings; Honey, Yoghurt, Nuts, Fruit, Homemade, SourCream, Chocolate, Marmalade or Jam etc.
