Ingredients for 4
people
4 dozen Fresh Natural Shelled Oysters (save juice to thin
batter if necessary)
1/2 a cup of Sea Salt
1/2 a tsp of Organic Cracked Black Pepper
2 Organic Free Range Naturally Fed Eggs
2 tbsp Homemade or Organic Coconut or Cashew Flour
1/4 of a tsp of Coconut Oil, Organic Animal Lard or Pure
Butter
2 tbsp finely chopped
Fresh Organic Parsley
Coconut oil, Organic Animal Lard or pure Unsalted Organic
Butter for frying
Method
Drain the oysters and check for shell fragments.
Beat the eggs lightly in a bowl until just combined.
Then add the coconut flour, salt, pepper, and 1/4 tsp of
coconut oil to the eggs and blend well, leaving for 10 minutes to rest.
Dip 1 oyster in the batter and see if it coats well, if the
batter is too thick add a small amount of oyster juice, if to thin add a little
more coconut flour and remix.
Heat the coconut oil in pan about 2mm (1/8 inch) to frying
temperature.
An easy way to check if temperature is right is to drop a
few drops of batter in the hot oil, if it sizzles then it’s ready.
If the oysters are large then dip them individually into the
batter and place them in the hot oil, when the batter is firm they are cooked.
If the oysters are small add all of them to the batter and place them in the
hot oil using a table spoon, they are cooked when the batter is firm and
slightly browned.
Serve with Lemon or Lime wedges, Homemade Vinegar or
Homemade Sauce Tartare.
This batter also works well for most other seafood’s.
