Ingredients
1 kg of Fresh Ripe Diced Organic Tomatoes
1 Clove of Minced Organic Garlic
1 tbsp of Coconut Oil
1 tbsp of Fresh Minced Organic Oregano or Basil or 1 tsp of
Dried
1 cup of Pure Fresh Water
Method
Place all the ingredients in a large heavy bottomed
stainless saucepan and simmer for 10 to 15 minutes or until it has reached your
desired consistency. Then place it in a blender or use an immersion blender to
make it into a smooth paste.
Sieve the mixture to remove the seeds and skins if desired,
we usually leave the mixture as is because there are many nutrients in the
skins and seeds.
Extras that can be added while cooking to make a unique
tomato paste include, mushrooms, olives, turmeric, ginger, capsicum, celery,
aubergine, fresh or dried herbs and spices. Keep the sauce in a sterile,
airtight, foodsafe container for up to a week refrigerated or freeze it.
You can also culture it by adding 2 tbsp of Whey Liquid
(Mesophilic Culture) and following the directions for culturing in the
introduction.
