Ingredients
5kg of Ripe Organic Tomatoes
4 Organic Onions
2 cups of Organic Wholemeal or Tuber Flour
2 cups of Homemade Vinegar or Organic Malt Vinegar
1 & ¾ cups of Raw Honey or 2 cups of Organic Raw Sugar
1/2 of a cup of sea Salt
1 tsp of Organic Chili Powder
1 tbsp of Homemade or Organic Curry Powder
1 tbsp of Organic Mustard Seeds
1 tsp of Organic Coriander Seeds
Method
Wash the tomatoes then roughly chop them with the and onion
and place them in a bowl sprinkled with 2 tsp of salt and then leave them for 8
to 12 hours or overnight covered at room temperature.
Place the tomato mixture in a heavy bottomed saucepan with 1
cup of vinegar and simmer this for 30 minutes. Then add the honey or sugar and
chili powder and continue simmering it for another 60 minutes stirring it as
needed.
Grind the mustard seeds to a fine powder in a coffee grinder
or similar grinder then mix them with the curry powder and 1 cup of vinegar and
add this to the tomato mixture. Simmer this mixture stirring constantly for a
few minutes or until thickened and then place the relish while its still hot
into hot sterile, airtight, foodsafe containers, seal and keep in a cool place
for up to 12 months.
