Ingredients
3kg of Ripe Organic Red Tomatoes
3kg of Green or Yellow (or a mixture) of Organic Tomatoes,
finely chopped
2 large Organic White Onions, finely Chopped
1
large Organic Red Onion, finely chopped
2
or 3 Organic Red Capsicum, finely chopped
4 & 1/2 cups of Homemade or Organic White Vinegar
2 & 1/2 cups of Organic Raw Sugar or 2 cups of Raw Honey
2 & 1/2 tbsp of Sea Salt
2 tsp of Ground Organic Ginger
2 or 3 Organic Green Capsicum, finely chopped
1 tsp of Organic Yellow Mustard Seeds
1 tsp of Organic Black Mustard Seeds
1 tsp of Organic Celery Seeds
2tbsp of Ground Organic Ceylon Cinnamon
1 tsp of Ground Organic Allspice
1 tsp of Ground Organic Cloves
1 tsp of Ground Organic Star Anise
1
tsp of Ground Organic Nutmeg
Method
Wash and finely chop the tomatoes and place them into a
heavy bottomed sauce pan with all the other ingredients and simmer this mixture
for 60 minutes. You can add a small amount of fresh water to make a thinner
mixture but this will increase the time it takes to reduce. Taste the relish
and adjust it if necessary adding more salt black pepper or chili if desired to
taste. Simmer a further 15 minutes or until reduced to your desired
consistency. Place the relish while still hot into hot sterile, airtight, food
safe containers, seal and keep in a cool place for up to 12 months.
