Tomato Sauce recipe 3

Ingredients
5kg of Ripe Organic Tomatoes
3 Organic Onions
1 Organic Red Capsicum
4 to 6 cloves of Fresh Organic Garlic
1/2 a cup of Homemade or Organic Apple Cider Vinegar
1 tbsp of Sea Salt (or less if you like)

Method
Slice the tomatoes, onions, garlic and capsicum into rings and toss with salt, then spread them out on an oven tray and roast them in the oven @ 180 degC (350 degF) for 10 to 15 minutes or until they are tender and semi dried, this increases their flavor. Then chop or process them in a food processor until smooth, and place them in a heavy bottomed saucepan and simmer for 15 to 30 minutes or until the sauce reaches the consistency you like, it may need the addition of a little fresh pure water.
Stir in the honey and at least 1/4 of a cup of vinegar, the rest to taste, then allow it to cool This sauce will keep for several weeks if you place it in a sterile, airtight, food safe container and cover it with a small amount of coconut oil to seal the surface then place on the lid. You can also culture it by adding 2 tbsp of Whey Liquid (Mesophilic Culture) and following the directions for culturing in the introduction or it can be frozen.
