Ingredients
1 kg of Green Organic Tomatoes diced medium
2 large Organic Red Onions, finely diced
3 cloves of Fresh Organic Garlic, finely diced
1 tbsp Fresh Organic Ginger, finely diced
Organic Green Chilies to taste, finely diced
1/2 a cup of Fresh Organic Lime Juice
1/2 a cup of Fresh Organic Coriander, finely chopped
2 tsp of Ground Organic Cumin
2 tsp of dried Oregano
Freshly Cracked Organic Black Pepper and Sea Salt to Taste
1 tbsp of Cold Pressed Coconut Oil
Method
Sauté the chili, onion, garlic and ginger for a few minutes
in the coconut oil then add the rest of the ingredients and simmer until the
tomatoes are tender. Place it all in a food processor or blender and puree it
to your desired chunkiness, if you want it smooth pass it through a sieve
several times then place it while still hot into hot sterilized, airtight,
foodsafe containers.
This sauce will keep for 6 months in a cool dark place or
use 2 tbsp of mesophilic culture when it has cooled and follow the directions
in the introduction.
